Potato Salad Recipe
- 9 or 10 medium potatoes boiled in their jackets
- 1/2 cup chopped sweet pickle
- 1/2 cup chopped onions
- 1/2 cup chopped celery
- salt and pepper to taste
- 1/2 cup mayonnaise
- 3 tbsp juice from pickles
- 1 tbsp prepared mustard
- 4 or 5 hard-cooked eggs
- Cook potatoes in jackets until just tender.
- Drain, cool, peel and dice.
- Add all other ingredients and mix gently until all the potatoes are coated with dressing.
- Add sliced eggs last.
9 or 10 servings.
